Sometimes I simply do not have the time to run to the store to pick up the all-purpose gluten free flour when I am in the middle of baking and discover I am all out. YIKES!! Yet, since I always have on hand the various other gluten free flour options, I have a back-up when necessary to make my own. Sure, it adds a little preparation time to the baking, yet it saves me time and money from having to run out on a moments notice (utilizing gas as well as unexpected grocery funds).
Also, depending on when I spot a sale on these high priced basics, I try to stock my pantry when the resources permit me to do so. To do this, one needs to be sure to balance out the cost of making it on your own versus the cost of purchasing the already mixed flour. This is the reason I watch pricing and available sales as I can many times find the flour mix on sale, as well as these ingredients, which by the way are called for in other recipes.
So, if you want to try your hand at making your own flour mixture, here is a recipe I find that works well for me. I tend to use the Bob Red Mill brand, as I can most easily find it locally.
GLUTEN & MILK FREE ALL-PURPOSE FLOUR MIX
Makes approximately 3 cups flour mix – Double for Holiday Baking 🙂
- 1 1/2 c white rice flour
- 3/4 cup sorghum flour (if you do not have sorghum, consider either white rice or additional brown rice flour)
- 2/3 cup cornstarch (OR you can use 1/2 cup arrowroot flour – I tend to have cornstarch on hand all the time)
- 1 tsp xanthan gum
- 1/4 cup potato starch
- 1/4 cup tapioca starch
Mix together to use as needed. Please NOTE: that if you are using in baked goods such as breads & cookies, you will still need to include/add the additional xanthan gum recommended in the recipe.
Storage: Place in a clean tupperware container and store in your refrigerator.
Also, you can freeze flour, so if you purchase in bulk, this is a nice way to keep your staple flour options fresh.
